Here’s a recipe for the remedial tart that Alex and I baked and destroyed post-sleep-in and pre-beach.

Again, by popular Instagram request, have a recipe for the remedial tart that Alex and I baked and destroyed post-sleep-in and pre-beach. I’m going to say that it’s guilt-free. Roll with it. Eat the whole thing.

‘CHOCOLATE’ FILLING:

  • 1 cup of pitted dates
  • 1 cup raw cashews
  • 3 tablespoons of raw carob powder
  • 5 tablespoons of raw cacao powder
  • 4 tablespoons of nut butter (I used almond butter)
  • 3 caps of vanilla essence
  • Wholebean soy milk

CRUST:

  • 2 cups of raw oats (nuts will also work, but increases fat content significantly)
  • 1 cup of pitted dates (I prefer Medjool ones)
  • 1 teaspoon of sea salt

TO DO:

  1. Preheat oven to 180 degrees Celcius fan-forced or 200 degrees Celsius conventional
  2. Smash raw oats in a food processor until powdery before adding dates and sea salt to form a goopy dough. Pack this into the bottom of a pie or tart tin, and stab fork holes in the formation of your face
  3. Bake until golden (about 15 minutes), then set aside
  4. Meanwhile, pulse all FILLING ingredients in a food processor until creamy (add milk as you need to – the mixture should end up almost at a honey consistency)
  5. Freeze for an hour and a half
  6. Drown the thing in berries
  7. Freeze for another half hour
  8. New Year’s Resolutions start tomorrow
